10 Favorite Recipes to Eat More Veggies

Even though we all know that eating more vegetables is good for us, we don’t always do it. That means we need to find easy ways to prepare vegetables and make them taste great!!!

Vegetables are the category of food that gives you the most bang for your buck. They are packed FULL of phytonutrients and antioxidants that help to support our health and fight disease.

When your Mom said, “eat your vegetables, they're good for you,” she wasn’t kidding! :-)

Ideally, you want to be eating 6-8 servings of vegetables each day.

A serving consists of ½ cup or 2 cups of salad greens.

I like to focus on eating vegetables that are in season for 3 main benefits:

  • Vegetable variety throughout the year
  • ​They're fresh & packed with more nutrients
  • ​It is more budget friendly.

To help you expand the types and quantity of vegetables you eat, I thought I would share some of my favorite recipes from other bloggers that are either vegetable side dishes or include vegetables in a main dish.

All of these recipes will help you to increase your vegetable intake supporting your health & fitness goals.

You won’t even miss Chinese take-out with this meal. Full of color and flavor this will be a recipe make again and again. I know I do.

I hate to admit the only way I would eat broccoli growing up is if it was drenched in velveeta cheese. Now roasted broccoli is one of my favorite sides. Add some additional seasonings and it is that much more flavorful. Move over boring plain steamed broccoli.

Skip the bun and add the veggies. This recipe will be one the entire family LOVES!

Get in a vegetable while you eat comfort food! A great addition to burger night.

I never imagined how good parsnip fries would be! We make these to go with burgers and dip them in Sir Kensington’s special sauce...YUM!!!

Roasted green beans go with everything and are an easy side dish that don’t take a lot of time or effort. I often use the ones that are already trimmed so all I have to do is put them on a cookie sheet, add oil & spices and put them in the oven.

I pair these zucchini noodles with baked salmon and it is DELICIOUS!!! Get yourself an Inspirialized to make the zucchini noodles in just minutes. It’s SO EASY or buy zucchini noodles already prepared for you.:-)

This is how I prefer to make kale. It’s tender and tastes great! The carrots are a BONUS vegetable.

Meal prep this on the weekend and have breakfast all week. This ensures that you are starting your day off with a couple of servings of vegetables. Rutabaga has become one of my favorite vegetables. Don’t knock it until you try it because it really is good!

This dish is easy, flavorful, and one that the whole family will like! You could even make a double batch so you have leftovers.
