National Zucchini Day is August 8th. I know, zucchini has its own day:-)
This time of year, zucchini is plentiful at farmer’s markets and in people’s gardens. Zucchini is so versatile, it can help us with weight loss, and also contains many nutrients to benefit our health, including a high amount of Vitamin C.
I personally love zucchini because it is easy to digest. If you are someone who experiences gas, bloating, constipation, diarrhea, or any other GI symptoms, zucchini is a wonderful vegetable to eat because it's easy on the tummy.
Zucchini is not only a great source of Vitamin C but also contains significant quantities of potassium, folate, and vitamin A. It also has a high content of fiber, perfect for weight loss, and when eaten regularly, can effectively lower your homocysteine levels.
I mentioned that zucchini is so versatile; here are a few ways you can use it: in soup, as a substitute for noodles (yes, zucchini noodles!), shredded in meatballs & meatloaves, shredded in muffins, bread, and even in gluten-free recipes such as brownies, and as a pizza crust.

Today I want to share with you my favorite zucchini recipes in celebration of National Zucchini Day. I plan on making several of these recipes in the next couple of weeks while zucchini is in peak season for seasonal cooking.
