At our house, we call these Mom’s Banana Chocolate Chip Pancakes. And when she comes to visit, we request that she makes them because it always tastes better when Mom makes it!
I really do have to give credit to my Mom for this recipe. She came up with it. :-)
We wanted a recipe that made 1-2 servings for when we just wanted a few pancakes instead of a big batch. You can always double this recipe if you need to!
These are grain-free pancakes that are naturally sweetened with bananas and full of healthy fats. They are the perfect level of sweetness even without adding maple syrup. All the deliciousness without the junky ingredients.
Even though they are made with whole food ingredients, those that don’t eat gluten-free or grain-free will still love them!
Whether it’s a special occasion, a weekend morning, or any day that you want pancakes you can’t go wrong with these!
Whisk eggs together in a mixing bowl. To the eggs add banana, melted coconut oil, coconut milk, and vanilla extract, and mix. Next, add coconut flour and whisk until smooth. Last add baking soda and apple cider vinegar and mix. Fold in chocolate chips.
Place a skillet over medium heat and add ½ TBSP to 1 TBSP of coconut oil or ghee. Once coconut oil or ghee is melted add ⅓ cup of pancake batter. Cook on one side for 3 minutes or until bubbles start to form. Flip and cook for another 3 minutes on the other side.
Optional: Top with banana slices, maple syrup, and chocolate chips.
Enjoy!
