Healthy Grain-Free Lasagna: A Gluten-Free, Dairy-Free Delight

Growing up, Italian dishes like spaghetti, pizza, and especially lasagna were the epitome of comfort food for me. The memory of my mom's bubbling pan of lasagna is a cherished one...

However, when I embraced a 100% gluten-free lifestyle, focusing on grain-free and mostly dairy-free eating, I reluctantly set aside my lasagna-making days. Back in 2012, when we first transitioned to a gluten-free diet, the options for suitable substitutes were scarce. Thankfully, times have changed!

Today, brands like Kite Hill and Cappello have revolutionized gluten-free cooking with their fantastic alternatives. Their products, which I use in this nutritious comfort food recipe, are perfect for those looking to avoid gluten, grains, and dairy due to their inflammatory properties. You can find these ingredients at Whole Foods or your local co-op.

This gluten-free lasagna recipe is a testament to the fact that you don't have to sacrifice your love for healthy Italian recipes when you're mindful about wellness and cooking. It's possible to enjoy the foods you adore, like this grain-free lasagna, without feeling bloated or compromising your fitness-friendly meals and weight loss goals.

Our family tradition includes enjoying a pan of this delicious, dairy-free lasagna every Christmas Eve. It's a dish that brings joy and health to our table, and I'm excited to share it with you.

Ingredients:

  • ​2 lbs. Italian sausage (extra protein option)
  • ​4-6 cups of baby spinach
  • ​12 oz. gluten-free lasagna noodles (I recommend Cappello’s fresh noodles)
  • ​16 oz. almond ricotta cheese (Kite Hill is my go-to)
  • ​36 oz. marinara sauce (no sugar added, like Rao’s)
  • ​1-2 cups shredded mozzarella cheese (optional, goat cheese is a great alternative)

Directions:

1. Preheat your oven to 350 degrees.

2. For the meat filling, brown the Italian sausage in a pan, then drain and return to the pan.

3. Mix the sausage with 24 ounces of marinara sauce.

4. Assemble the lasagna in a 9 x 13 pan, starting with a layer of marinara, followed by Cappello's noodles, meat filling, dollops of Kite Hill almond ricotta, and spinach. Repeat the layers, finishing with noodles, marinara, and ricotta.

5. Tent with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes.

(Note: Adjust cooking time if using different types of noodles.)
