Ingredients

  • ​2 TBSP coconut oil
  • 1 onion, chopped
  • 2-3 large carrots, chopped
  • 1 cup celery, chopped
  • 1 can 28 oz. whole peeled tomatoes, drained and cut up
  • 6-8 cups vegetable or chicken broth (bone broth is best, I like Kettle & Fire)
  • 2 zucchini, chopped
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1 tsp. chives
  • 1 tsp. marjoram
  • Himalayan Sea Salt to taste
  • 4 cups of kale, chopped
  • 3-4 garlic cloves, minced

Directions

1) In a large pot over medium heat, saute onion, garlic cloves, carrots, and celery in oil until vegetables are soft, about 8-9 minutes.

2) Add tomatoes, spices, zucchini, spices, & broth. Simmer for 15-20 minutes.

3) Add kale and cook for 10 additional minutes.
