Massaging raw kale not only makes it more digestible by breaking down the fibers but also turns it into a tender, enjoyable base for any salad, making it a favorite in heart-healthy meals. This method is especially effective with Lacinato kale, also known as Tuscan or Dinosaur kale, which I prefer for its texture and versatility.
This low-calorie recipe increases your intake of high-fiber foods and antioxidant-rich salad ingredients. Curious about the different types of kale? While Curly kale is common, Lacinato kale's flat leaves are ideal for both massaged kale salads and hearty soups or stews.
Our Fall Harvest Salad offers bursts of sweetness from butternut squash, apple, and dried cranberries, typical of many delightful gluten-free salad options. Add chicken or pair it with salmon for a complete protein source, or enjoy it as a side in your upcoming holiday meal.
Preheat oven to 375 degrees to roast the squash. Spread chopped squash on a baking sheet lined with parchment paper. Drizzle with 1 TBSP of coconut oil and sprinkle with Garam masala seasoning. Roast for 35-40 minutes until lightly browned.
Now cook your quinoa according to the directions on the package.
While your squash is roasting & quinoa is cooking, wash, destem, and chop your kale into small pieces. Add chopped kale to a large mixing or salad bowl.
In a small mixing bowl whisk together apple cider, apple cider vinegar, olive oil, sea salt, cinnamon, thyme, and black pepper to make your dressing.
Pour dressing over the kale and massage the dressing into the kale for 3-4 minutes with your hands. The kale will turn a bright green and begin to soften.
Begin to assemble your salad by adding roasted squash, cooked quinoa, apple, pumpkin seeds, goat cheese, and dried cranberries.
Mix well and enjoy!!!
