This Chicken Salad Recipe was sparked by a dish in “Meals Made Simple” by Danielle Walker, as well as a local eatery that Justin & I couldn't resist while vacationing in Arizona a few years ago. Prior to that excursion, I had a steadfast rule against mingling my fruits and vegetables or having fruit in any sort of salad. But this Salad with Blueberries broke those barriers!
It's also thanks to this Beet Salad Recipe that I now have an affinity for beets. They were the lone vegetable that took some time for me to embrace. But once I roasted them alongside bacon and incorporated them into this Summer Salad Recipe, I was absolutely captivated!
This season is the perfect time to weave Healthy Salad Recipes into your Supportive Nutrition regimen. That's because salad greens like arugula, as well as fruits such as blueberries, are fresh and readily available. Moreover, these types of ingredients provide a cooling effect, perfect for the warm summer months.
Begin by preheating your oven to 400 degrees.
Spread the sliced beets on a rimmed baking sheet covered with parchment paper. Top these with slices of bacon, and then roast them in the oven for 15 minutes. After that, move the bacon onto a separate baking sheet, returning it to the oven.
