Roasted Beet and Chicken Salad with Blueberries: A Nutrition-Rich Summer Delight

I could devour this Roasted Beet and Chicken Salad every single day...it's just that scrumptious!!!

This Chicken Salad Recipe was sparked by a dish in “Meals Made Simple” by Danielle Walker, as well as a local eatery that Justin & I couldn't resist while vacationing in Arizona a few years ago. Prior to that excursion, I had a steadfast rule against mingling my fruits and vegetables or having fruit in any sort of salad. But this Salad with Blueberries broke those barriers!

It's also thanks to this Beet Salad Recipe that I now have an affinity for beets. They were the lone vegetable that took some time for me to embrace. But once I roasted them alongside bacon and incorporated them into this Summer Salad Recipe, I was absolutely captivated!

This season is the perfect time to weave Healthy Salad Recipes into your Supportive Nutrition regimen. That's because salad greens like arugula, as well as fruits such as blueberries, are fresh and readily available. Moreover, these types of ingredients provide a cooling effect, perfect for the warm summer months.

Ingredients

  • 2 ½ cups chopped or shredded cooked chicken
  • 2-3 medium-sized beets, peeled and thinly sliced
  • 5 strips of uncured bacon
  • ¼ cup sprouted pumpkin seeds
  • 1 cup organic blueberries
  • 1 avocado, diced (Avocado Salad Recipe lovers will appreciate this optional addition)
  • 8 cups of salad greens, washed and torn into bite-sized pieces
  • ¼ cup Eniva Salad Oil (A vital component of our Homemade Salad Dressing)

directions

Begin by preheating your oven to 400 degrees.

Spread the sliced beets on a rimmed baking sheet covered with parchment paper. Top these with slices of bacon, and then roast them in the oven for 15 minutes. After that, move the bacon onto a separate baking sheet, returning it to the oven.

Stir the beets around to make sure they get a good coating of the rendered bacon fat. Continue roasting both the beets and bacon for another 15 minutes or until they reach your desired crispiness.

Drain off any additional bacon fat and then transfer the bacon onto paper towels to drain further and cool. Chop the cooled bacon.

Next, gather your salad greens, blueberries, avocado, pumpkin seeds, bacon, and beets in a large salad bowl. Drizzle everything with the Eniva Salad Oil (our choice for a simple and healthy Homemade Salad Dressing), give it all a good toss, and then, ENJOY!

This Salad with Bacon Recipe meets the Healthy Salad Recipes criteria with its thoughtful blend of protein, vegetables, and fruit. Not only is this dish a feast for the taste buds, but it's also a visual delight, promising to be a hit in any season. Enjoy this gem from our Summer Salad Recipes collection!
