This has been a cherished favorite in our home for years, especially for those of us exploring health-conscious recipes. Adapted from PaleOMG’s Pizza Spaghetti Pie, we've crafted our own version that's become an absolute hit. It's a gluten-free comfort food that doesn't skimp on flavor.
This dairy-free casserole is a testament to the fact that you can prioritize your health and still enjoy the foods you love. No one will even guess it's a healthy pizza alternative. It's grain-free, gluten-free, and dairy-free, yet packed with all the flavors you crave.
Whether you've been exploring spaghetti squash recipes or looking for a unique twist on classic favorites, this casserole is a game-changer.
Note: Feel free to add mushrooms, olives, or any other toppings you enjoy.
Preheat oven to 400 degrees. Slice spaghetti squash in half and place cut side down on a baking sheet lined with parchment paper.
Bake squash for 30-40 minutes until the skin of the squash gives when you press on it. Once you take out your squash, reduce the oven temperature to 350 degrees.
Once squash is done, remove seeds and then using a fork remove threads and place in a 9x13 baking dish.
Place a large skillet over medium heat. Add Italian sausage & break it into small pieces. Cook until the sausage is no longer pink. Drain grease from sausage and add to the baking dish with spaghetti squash
Add pizza sauce, pizza seasoning, salt, and pepper to the sausage & squash mixture and mix well. Now add the whisked eggs to the baking dish and mix everything together.
Now break your Kite Hill ricotta cheese into small chunks/pieces and distribute throughout your casserole.
Place in the oven and bake for 1 hour or until the top of the mixture forms a slight crust that doesn’t give when you press on it in the middle of the dish.
Let cool for 5 minutes before serving.
