It doesn’t need to be Tuesday to make tacos! In my opinion, any day is a good day for tacos or Mexican food.:-)
I recently saw a t-shirt that said, “Live Everyday Like Taco Tuesday!”
If you are always asking yourself at 4 pm, “what’s for dinner?” declare that Tuesday will be Taco Tuesday and then at least 1 out of the 7 days of the week are covered!
There are LOTS of possibilities when it comes to Taco Tuesday so you and your family won’t ever be bored.
You can also make healthy options at home that won’t leave you feeling yucky like you do after you get tacos from a drive-thru.
Here are some of my favorite taco recipes from some of my favorite food bloggers:
I feel like the name says it all! Taco + lasagna + casserole, it’s like it doesn’t get better than this!!! This is one of my go-to recipes for Taco Tuesday. It’s super easy to put together and then customize with the toppings of your choice.
Everyone in the midwest loves a good hot dish! If you can tolerate beans, rice, and dairy this is a great hearty option that the whole family will love. Again easy to put together and then put it in the oven and forget about it until dinner time. Leftovers will be great for lunch the next day.
The wonderful thing about this casserole is that you get to have the taste of enchilada’s without all the work! This is an easy weeknight comfort meal that is in our recipe rotation. I hit the easy button with this and use Siete’s enchilada sauce instead of making my own.
I LOVE fish tacos and most of the time they are breaded with gluten and/or deep fried. I was so happy when I discovered this recipe because I can make delicious fish tacos at home that don’t leave me feeling like junk. Instead of making my own tortilla’s I use the Siete brand, it saves a whole lot of work!
This soup is perfect for the colder months when you want something warm and comforting. A bonus is that you can have dinner on the table in 30 minutes! You can add beans or leave them out and customize the toppings to whatever you and your family enjoy. If it were me, I would serve this soup with Siete grain free tortilla chips!
Another easy weeknight dinner that is done in 30 minutes! I made this when we had family visiting last year and they requested it again they liked it that much. This will please even your pickiest eaters. Give lots of options for toppings and again serve it with Siete chips...do you see a pattern here???
You can make this salad and give your family the option to have taco shells, chips, or a tortilla. Or meal prep it on Sunday for lunches for the week. Enjoy Taco Tuesday all week long.:-) Be creative and add your own spin to it with cheese, beans, or anything else you like.
Tacos and pizza...YES PLEASE!!! You may even save this recipe for pizza night. You can easily make this dairy free and you don’t even miss the cheese. It’s worth the time and effort to make your own crust. Trust me you won’t be disappointed with this recipe.
This is a recipe that I shared in our very first 21-Day Detox Challenge way back in 2013 and we have been making it ever since! One of things that has really worked for me when it comes to nutrition is to find substitutes. Those substitutions often look like subbing out carbohydrates for vegetables. This delicious meal does just that without sacrificing the flavor.
