Serves 2 - 4
Preheat oven to 400 degrees.
Place an oven safe skillet over medium heat and add coconut oil or bacon fat. Add butternut squash once cooking fat is melted. Cook for 15 minutes.
Remove skillet from heat and add brussel sprouts, salt, pepper, sage, oregano, sage, garlic powder, and cinnamon to butternut squash and mix well. Place skillet in the oven for 15 minutes, roasting the squash and brussel sprouts together.
While vegetables are roasting, place another skillet over medium heat and add breakfast sausage. Cook sausage until no longer pink. Drain any excess grease from the meat and set aside.
After 15 minutes, take vegetables out of the oven and add chopped apple to the skillet and mix well. Place back in the oven for 10 more minutes or until vegetables are soft.
Once squash, brussel sprout, and apple mixture is cooked, remove from the oven and add sausage, mixing well.
Top with fried eggs if desired.
